    They come from the short plate primal cut, which is located directly below the rib primal on a cow. Unlike back ribs, which come from the rib primal and have a thin layer of meat, the plate rib will have a thick layer of meat and fat attached to the bone. Cook them low and slow on the BBQ and enjoy!
