Sweet & Sour Citrus Pork

Ingredients

For the Sweet & Sour Citrus Pork

  • 2 pounds Five Marys Farms pork loin chops
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 medium onion, sliced
  • 3 cloves of garlic, chopped

FOR THE SWEET & SOUR SAUCE

  • 1/2 cup Thai-style sweet chili sauce
  • 1/4 cup rice vinegar
  • 1-2 teaspoons sambol or sriracha sauce (opinion)
  • Juice of 2 mandarin oranges
  • 1 teaspoon cornstarch
  • 1/4 cup water

FOR GARNISH

  • 1/2 cup cilantro chopped

Directions

  1. Thinly slice the pork and stir fry it in the olive oil and salt and pepper over medium-high heat until it begins to caramelize.

  2. Remove from the pan.

  3. Add onions and garlic to the pan.

  4. Stir fry 1-2 minutes.

  5. Mix all sauce ingredients except cornstarch and water.

  6. Pour the sauce mixture into the garlic and onions.

  7. Reduce heat to medium.

  8. Stir the cornstarch and water together and add to the pan.

  9. Simmer 4-5 minutes until the sauce is slightly thickened and glossy.

  10. Add the pork back to the pan. Taste for seasoning.

  11. Serve with hot jasmine rice and chopped cilantro.

Kitchen Notes

Cut: All pork chops come from the loin of the pig. The loin runs from the hip to the shoulder just below the back on a pig.
