Lamb Skewers with Harissa Mayo

Ingredients

FOR LAMB SKEWERS

  • 2 pounds Leg of Lamb, 1” cubes
  • 1/2 cup Red Onions, sliced paper thin
  • 1 each Meyer Lemon, whole cut in small chunks
  • 1 Tablespoon Parsley, chopped fine
  • 1 Tablespoon Anchovy filets
  • 1/4 cup Olive Oil
  • Pinch of Chili Flake
  • Salt and Pepper to taste

FOR HARISSA MAYO

  • 1 Tablespoon Harissa Paste
  • 1 Egg Yolk
  • 1 Garlic Clove, crushed
  • 1 teaspoon white wine vinegar
  • 1 cup Olive oil, light in flavor
  • Salt and Pepper to taste

Directions

FOR LAMB SKEWERS

  1. Cut meyer lemon and remove seeds

  2. Blend lemon, anchovy and olive oil in a high speed blender put in a bowl and add remaining ingredients

  3. Rub over meat and let marinate for an hour

  4. Soak flat skewers and skewer meat making sure to get some onion with each piece

  5. Clean grill and rub a little oil on before grilling

  6. Make sure you get a good sear before turning skewers

  7. Serve with harissa mayo on the side

FOR HARISSA MAYO

  1. In a blender add all ingredients except oil and blend on low

  2. Stream in oil and add water if it gets too thick. taste and adjust seasoning
