Ingredients
- 1 1/2 pounds Five Marys Farm sirloin steaks
- Salt and pepper to taste
- Pinch of chili flakes or Five Marys Farms spice rub
- 2 tablespoons butter
- 1 tablespoon olive oil
- 4-6 clove of garlic, smashed and diced
- 1-2 tablespoons honey
- 6-8 medium to large sized carrots, peeled and sliced
- 2-3 tablespoons chopped chives
Directions
Slice the sirloin steaks against the grain into half-inch thick slices, roughly 2 inches long.
Season the steak strips with salt and pepper and spice rub.
In a large cast iron or heavy bottom non-stick pan, melt the butter and olive oil.
Sear the strips on all sides over medium-high heat. Don’t be afraid to leave the meat to brown and crisp before turning it.
When the steak is almost done, add the garlic and honey.
Stir to cook 1-2 minutes.
Remove the steak and garlic with a slotted spoon, leaving the juices in the pan.
Reduce the heat to medium.
Add the sliced carrots and 2 tablespoons of water.
Season the carrots with salt and pepper.
Cook 4-5 minutes until the water has evaporated and the vegetables are crisp-tender.
Add the steak back to the pan and serve garnished with chives.
