Five Marys Lamb Meatballs

Ingredients

  • 2 pounds Five Marys Lamb, ground
  • Olive oil
  • 1 cup Onion, small dice
  • 1 clove Garlic, crushed
  • 1 cup Panko Breadcrumbs, moisten with milk or red wine
  • 1 teaspoon Tomato Paste
  • 1 Tablespoon Red Wine
  • 1 Tablespoon Pecorino or Feta Cheese
  • 1 clove Garlic, crushed
  • 1 each Farm Egg
  • 1/4 cup Flat Leaf Parsley, fienyl chopped
  • 1 Tablespoon Oregano, finely chopped

Directions

  1. Add Onion and Garlic to a pan with a drizzle of olive oil and cook until soft

  2. Cool down and add to bowl with remaining ingredients and mix until fully incorporated

  3. Make a small patty and cook in a pan to test your seasoning

  4. Adjust seasoning and form small balls using a cookie scooper and rolling in your hand

  5. Bring you sautee pan to medium high heat with a drizzle of olive oil and sautee meatballs rolling them every now and then

  6. You should get a nice browning all around

  7. Remove to a tray and repeat with remaining meatballs

  8. When done place meatballs in a baking dish and top with spicy marinara

  9. Serve with Pasta and grated pecorino
