Crunchy Beef Fiesta Envelopes

Ingredients

  • 1 pound Five Marys ground beef
  • 1 medium onion, diced
  • 1 small green pepper, diced
  • 1 15-ounce can of black beans, rinsed and drained
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 teaspoon cumin
  • 6-8 large burrito-sized flour tortillas
  • 2 1/2 cups shredded cheddar cheese
  • Neutral oil for frying

Directions

  1. You will need 2 skillets

  2. SAUTÉ the beef, onion, and green pepper until brown over medium-high heat.

  3. ADD the beans and seasonings and gently stir.

  4. Continue to COOK 2-3 minutes.

  5. To make the envelopes, HEAT a skillet over medium heat with a half teaspoon of oil.

  6. SPOON roughly 1/4 – 1/3 cup meat mixture into the center of the tortilla in the shape of a rectangle.

  7. SPRINKLE 2-3 tablespoons of cheese over the top.

  8. FOLD the sides into the center, then carefully fold the other sides inward. You should have a rough rectangle.

  9. PLACE the envelope seam side down in the oil and fry roughly 2 minutes per side until the pocket is crisp and browned on each side.

  10. COOL on a wide rack.

  11. REPEAT this process until all the tortillas are finished.
