
Crunchy Beef Fiesta Envelopes

Ingredients
- 1 pound Five Marys ground beef
- 1 medium onion, diced
- 1 small green pepper, diced
- 1 15-ounce can of black beans, rinsed and drained
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/2 teaspoon cumin
- 6-8 large burrito-sized flour tortillas
- 2 1/2 cups shredded cheddar cheese
- Neutral oil for frying
Directions
You will need 2 skillets
SAUTÉ the beef, onion, and green pepper until brown over medium-high heat.
ADD the beans and seasonings and gently stir.
Continue to COOK 2-3 minutes.
To make the envelopes, HEAT a skillet over medium heat with a half teaspoon of oil.
SPOON roughly 1/4 – 1/3 cup meat mixture into the center of the tortilla in the shape of a rectangle.
SPRINKLE 2-3 tablespoons of cheese over the top.
FOLD the sides into the center, then carefully fold the other sides inward. You should have a rough rectangle.
PLACE the envelope seam side down in the oil and fry roughly 2 minutes per side until the pocket is crisp and browned on each side.
COOL on a wide rack.
REPEAT this process until all the tortillas are finished.
