Blueberry Dutch Pancakes

1 large skillet or 2 small skillets

Ingredients

  • 4 Farm Eggs
  • 3/4 Cup Whole Milk
  • 2 Tablespoons Sugar
  • 1/2 tsp. Lemon Zest or Orange
  • 1/2 tsp. Vanilla Extract
  • 3/4 Cup All Purpose Flour, sifted
  • Pinch Kosher Salt
  • 2 Tbl. Butter, melted
  • 1 Tbl. Lard
  • 1/2 c. Blueberries

Directions

  1. Preheat Oven to 450F

  2. Beat wet ingredients until broken up and sift in dry ingredients

  3. Add melted butter and stir in. Let Batter rest in fridge for 10 minutes.

  4. In the meantime put a 12” Castiron in oven to pre heat.

  5. Remove Castiron from oven and add lard and melt

  6. Add batter and sprinkle blueberries in

  7. Bake in Castiron 450F 15-20 min.
