Beef Heart Carne Cruda

Ingredients
- 1-2 Beef Hearts, 4-5 pounds
- 1/4 cup Minced Shallots
- 1 Tablespoon Minced Capers
- 1 Tablespoon Parsley and Chives
- 1 Tablespoon Dijon Mustard
- 2 Tablespoon of good Olive Oil
- 1 teaspoon Lemon Juice
- 1 teaspoon Red Wine Vinegar
- 1/2 teaspoon Chili Flake of your choice, something smoky
- Sea Salt and Cracked Black Pepper
- 1 egg yolk, optional
- Handful of Edible Flowers or Alfalfa Flowers for garnish
Directions
Trim the heart of sinew and gristle, and cut into small chunks
Chop finely with two knives or with a meat grinder on a 1/4 inch dye
Chill thoroughly
Add Egg Yolk for creaminess
