Beef Heart Carne Cruda

Ingredients

  • 1-2 Beef Hearts, 4-5 pounds
  • 1/4 cup Minced Shallots
  • 1 Tablespoon Minced Capers
  • 1 Tablespoon Parsley and Chives
  • 1 Tablespoon Dijon Mustard
  • 2 Tablespoon of good Olive Oil
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Red Wine Vinegar
  • 1/2 teaspoon Chili Flake of your choice, something smoky
  • Sea Salt and Cracked Black Pepper
  • 1 egg yolk, optional
  • Handful of Edible Flowers or Alfalfa Flowers for garnish

Directions

  1. Trim the heart of sinew and gristle, and cut into small chunks

  2. Chop finely with two knives or with a meat grinder on a 1/4 inch dye

  3. Chill thoroughly

  4. Add Egg Yolk for creaminess
