Barbacoa Beef Tongue Tacos

Ingredients
FOR THE BRAISE
- 1 ea. Beef Tongue, rinsed
- 1/4 ea. Onion, left over from dicing
- 4 cloves Garlic, crushed
- 1 bay leaf
- 1 tsp. Sea Salt
- Water to cover
FOR THE BARBACOA SPICE MIX
- 1 Onion, small dice, end cuts use for braise
- 2 Tbl. Mexican Chili Paste
Directions
In a Pot, Crock pot, or Pressure cooker simmer tongue until tender, about 3 hours
Let cool until you can handle it, peel off skin and any tought pieces
Add a spoon of chili paste as desired and season with salt
Add Pulled tongue to mix and warm for serving
Serve with corn tortillas, salsa verde, onion and cilantro
