Homestyle Smoked Meatloaf

Ingredients

  • 1 slice sandwich bread
  • 1/2 cup grated onion
  • 1 cup ketchup, divided
  • 1 tablespoon dark brown sugar
  • 1 tablespoon yellow mustard
  • 1-2 tablespoons soy sauce
  • 2 cloves crushed, minced fresh garlic
  • 1 egg
  • Salt and pepper to taste
  • 2 pounds Five Marys Farms ground beef

Directions

  1. Preheat the smoker to 350 degrees

  2. Pulse the sandwich bread in a food processor until it’s a fine crumb

  3. Add all ingredients plus the bread crumbs to a large mixing bowl (reserving half of the ketchup) and mix gently until completely combined.

  4. Place the meat into a cast iron loaf pan or skillet

  5. Spread the remaining ketchup over top and cook in the smoker 60-90 minutes

  6. Check the meat often as the bottom may darken before the meat is done

  7. Keep the meatloaf over indirect heat until fully cooked and nicely caramelized
